Recently I started Slimming World (hate to shatter your illusions that I’m sexy but I’m technically really obese. Anyway.) In case you don’t know, the whole objective of Slimming World is to eat loads of fruit and veg and protein and healthy extras and then you get 5 – 15 syns per day on top of that.
As someone who is a bit nerdy when it comes to creating recipes, I saw this allowance of unlimited “free” food (food you can eat as much as you want of without having to count, weigh, or measure) as something of a challenge. I knew in my HEART that there was a way of screwing the system, a way of making incredibly yummy treats that were totally low-syn but still full of crap. I know that’s not really the point, but for someone like me who has a higher than average knowledge of food and baking (I know, I’m modest) I definitely saw this as a challenge. Half of me wanted to lose weight, half of me wanted to do the plan perfectly and come back having gained 5lbs and shove it in their face shouting “see! see! It doesn’t work!” (I lost 4lbs last week anyway so it DOES work. I’ve only been doing it for 2 weeks now but I would defo recommend Slimming World to anyone who wants to put effort into actually losing weight.)
As a product of my weird little rebellious mind, I made these amazing peanut butter cookies! They’re only 4 ingredients, one of which being peanut butter, so if you’re not a peanut butter fan, don’t make them. They don’t look like much and the texture is a bit weird but once they’re in your mouth they are a real life taste sensation and SO easy and quick to make. So here you go, for only 2 SYNS PER COOKIE – the dream.
Peanut butter cookies – makes about 10
- 100g Whole Earth peanut butter (make sure you use one with no added sugar)
- 50g sugar (if you want to make these even less syns, use your SW sugar sub of choice)
- 1/2 tsp baking powder
- 1 egg, or 1 egg’s worth of egg substitute if you’re doing them vegan styllleeee
Preheat your fan oven to 180 degrees. If you don’t have a fan oven, buy one from Currys or somewhere.
Mix all your ingredients up in a bowl.
When it’s all mixed, grease a baking tray with your 1 cal spray of choice. I use FryLight coconut oil which is perf.
This is the really sticky part, but bare with. Using your hands, scoop some mixture out of the bowl (just a small splodge) and slop it onto the baking tray as neatly as pos in a little circle. Repeat until you’ve got enough on the tray, then lick the mix off your fingers.
Put the cookies in the oven for about 10 minutes, until the edges are just turning golden brown. They might look a bit underdone but trust me, they’re done.
When they’re ready, take them out of the oven and leave them on the tray for about 5 minutes to harden up as they will still be v. squidgy at this point. Then transfer to a cooling rack. If they’re still soft, that’s totally normal. They’re a lot more like one of those big chewy bakery cookies than the hard, biscuity ones.
When they’re cool enough, transfer to your mouth. You can literally eat 7 of them and you won’t even hit your daily syn limit. Pretty cool, huh?
